Baking with Wild Yeast

The beauty of Sourdough

Part of the beauty of authentic Sourdough is the wild yeast that it's made with.
The wheat grains themselves host this wild yeast, and one can simply use good flour (or grind your own whole grains), add water to the flour, let it culture over a few weeks (stirring in small amounts of fresh flour & water every day) and a new sourdough starter culture is born!
The process of fermentation the flour goes through (as the wild yeast works) increases the nutrients & digestibility of the final product.

It's a fascinating natural process, one that has such great value in this chaotic unhealthy world that we live in.
Being able to make sustainable healthy food for our families and communities is a beautiful thing.

I'm far from being any kind of professional baker, but I've enjoyed learning how to work with wild yeast in all kinds of baked goods.
A decade ago I couldn't even consume a trace of wheat without lasting stomach pain. Being able to enjoy the goodness and decadence of sourdough bread & baked goods has been an intimate and deep joy for me. ❤️

    Organic Tomato Basil

    One of our favorites! This bread is delicious toasted & topped with Avocados, for grilled cheese, or made into sandwiches! 

    My own children and nieces & nephews love eating it by the chunk 🤣


    Ingredients:

    *Unbleached non-fortified non-bromated wheat flour, well water, *tomato puree, *dried Basil, *Garlic granules, Real salt.

    Basic Rustic

    This is my favorite basic rustic loaf. Perfect for sandwiches or toasted & topped with butter or jam ❤️


    Ingredients:

    *Unbleached Unbromated Wheat Flour, pure well water, wild yeast starter (*flour, water), Real Salt.

    Organic Sourdough Cinnamon Rolls!

    Cinnamon Rolls

    1/2 dozen $18, whole dozen $30

    Delicious Sourdough Cinnamon Rolls made with organic flour and sweetened with organic Coconut sugar. These are my all-time favorites! 8-12hr fermented. 

    + Cinnamon Star or Cinnamon Roll Wreath. 

    These an also be made with fresh-milled organic flour or sweetened with honey. 


    Ingredients: *Stone-ground organic white wheat flour, organically based pastured fresh milk or buttermilk, butter, organic coconut sugar, organic cinnamon powder, aluminum-free & corn-free baking powder, baking soda, salt.
